Vegan No-Bake Coconut Almond Tart Crust

Crunchy, nutty tart crust made from wholesome, healthy ingredients. Not only is this vegan and gentle on the earth, it’s also delicious and versatile. Plus, it’s no-bake and easy to assemble—meaning a pie or tart you can feel good about in no time.

I know we’re not supposed to get political here. And I know so many of my friends love to trash talk food bloggers saying a peep beyond the recipe itself (I think what they’re looking for is a cookbook…).

To both of those ideas, I say whatever.

Ways to reduce single-use plastic in your beauty and skincare routine

Below I’m recommending items I’ve tried. There are plenty out there, but these are ones I know work well.

Take a look at your shower. How any plastic containers do you have? I have one, and I’m already testing recipes to replace this one. This is another major source of plastic pollution, so please consider trying alternatives!

This shampoo bar works great for dry hair and this one actually makes my hair way straighter without trying! This one works well when I want to wear my hair naturally (wavy). And so far this is my favorite conditioner bar. I love this hair oil as well—and a little goes a long way!

I love this soap for sensitive skin. And this shaving cream has a plastic cap but a metal container, which so far is the best I can do since my skin is picky.

And since I use several types of bars in the shower, I love these soap savers!

I actually make my own facial skincare items, including a face scrub that’s equal parts sugar and honey, plus essential oils tailored to my skin’s needs.

I also love that this sunscreen uses recycled milk jugs for the containers! Plus, it’s reef safe.

Vegan tart crust

In honor of Earth Day, I’m sharing a vegan recipe. While I clearly am not vegan and love my eggs and dairy, I also know that vegan diets do a lot to limit our carbon footprint.

Plus, this tart crust is just so yummy! Even if you don’t care about being vegan, this tart crust is such a great way to make a no-bake pie or tart. It’s crunchy and nutty and easy and pairs well with a lot of fillings. Even my mother-in-law, who doesn’t care for nuts, liked this! Plus, it’s sooooo simple to make. Grind up some ingredients, add melted coconut oil, press into pan and chill. Literally and figuratively. :)

How to make vegan no-bake coconut almond tart crust

Grind up roasted almonds with coconut flakes and coconut sugar (or another vegan sugar). This batch didn’t get ground up very well because my food processor broke in the middle, but it still worked!

Add melted coconut oil.

Press evenly into your pie or tart pan.

Chill or freeze then fill. Easy!

Tips and notes for this recipe

Toast almonds

Yes, this negates the no-bake aspect. But I only had raw almonds and had to toast them and it was sooooooo good. Bake them on a rimmed cookie sheet at 350 for 5-10 minutes, stirring halfway. Watch carefully, as they burn quickly.

Take your time pressing into pan

I like to work in concentric circles, rotating the pan and getting it evenly distributed as I go, gently pressing all the while. Eventually, you can start pressing more firmly, once it’s evenly spread around the bottom and up the sides. And don’t forget to use a flat cup or measuring cup to do this!

Coconut Oil Pie Crust

Vegan No-Bake Coconut Almond Tart Crust

  • prep time: 10 minutes
  • chill time: 20 minutes
  • total time: 30 minutes

yields: one 9”-10” tart crust

Ingredients:

  • 1 ½ cups (225g) roasted whole almonds
  • ½ cup (35g) unsweetened coconut flakes
  • ½ cup coconut sugar (or another vegan granulated sugar)
  • pinch sea salt (optional)
  • 6 tablespoons (90g) coconut oil, melted

Instructions:

  1. If desired, toast the almonds in a single layer on a rimmed cookie sheet at 350 for 5-10 minutes, stirring halfway and checking early to ensure they don’t burn. Let cool completely. (This is necessary if using raw almonds.)
  2. In a food processor, grind the almonds, coconut flakes, sugar, and salt (if using) until the almonds are finely ground, about the size of sand.
  3. Add in the melted coconut oil and pulse until blended (or stir together in a separate bowl).
  4. Gently distribute around your tart pan, spreading an even layer across the bottom and a little up the sides. Using a flat-bottomed cup or measuring cup, firmly press the crust in, going in concentric circles to slowly apply pressure across the tart. If you press too firmly at the beginning, it’ll just make a hole in the crust, so go in circles until it starts to stick in place.
  5. Freeze for 20 minutes, or chill in the refrigerator for 30-60 minutes, until firm. Fill as desired.
